Delete Gantt dependency requires to click on it and press the delete key.
How can I delete it on a mobile device without a physical keyboard?

Currently the functionality to delete a dependency on a mobile device is not implemented in the Gantt. I am therefore converting the thread to a feature request which you can track on this link. Please follow it for further information and do not forget to cast your vote for it.
